During the colder months, when it's hard to get out of bed in the morning, there is one occasion which should get everyone leaping up and raring to go... Pancake Day!
Traditionally, Pancake Day, or Shrove Tuesday, is the day of feasting before lent begins on Ash Wednesday for six weeks prior to Easter.

Here are our top tips to make the best pancakes:
To get your pancakes in tip-top condition, make your batter and rest it for as long as possible in the fridge before using it. This allows the flour to absorb the liquid and make your sweet (or savoury!) treat lighter and fluffier.
The easiest way to remember how to make pancakes is with the '3 2 1' method. To make the batter, use 300ml of milk, two eggs and 100g of self-raising flour.
To make vegan pancakes, swap out the eggs for an extra 100ml of milk (plant based of course), and 1 tsp baking powder.
Make sure you use a non stick pan with a thin layer of oil - too much oil will ruin the batter and make it too wet. The easiest way to control this is to use a piece of kitchen roll or a cloth to rub oil in the base of the pan.
Sieve your flour to avoid lumpy batter and whisk well.
